-----This episode is also available in Spanish-----Jessie Inschauspé, best known as Glucose Goddess, has written the book everyone is talking about: Glucose Revolution. It all started as self-experimentation. After graduating in Mathematics from the King’s College London and a master’s degree in Biochemistry from the University of Georgetown, USA, she worked in genetic analysis at a Silicon Valley start-up. This made her aware of how powerful food habits can be, and especially what role glucose plays. So for two years, Jessie wore a continuous glucose monitor on her left arm, just like people with diabetes do to record their glucose levels and more accurately dose their medication. “My lab was my kitchen, my test subject was myself, and my hypothesis was that food and movement influence glucose through a set of rules that we could define”, see says on her book. Today we talk with her about everything she discovered about the fascinating world of glucose.
